1 zucchini. Rub on a fine grater.
6 eggs.

    So many copycats on y/t! Unfortunately, I had problems with this recipe but have made some changes to fix it. Firstly, my roll was wet and took longer to bake. In future, I will salt then sit the grated zucchini in a drainer for a few minutes, and then squeeze out the water before adding to the egg mix. Secondly, I don't like to eat raw garlic. In future, I will saute some leeks (or shallots or onions) and add the garlic to that. Then add this cooled mix to the creamed cheese. Otherwise, a nice and simple dish, which I will add to our next festive get-together. Thank you.

    Looks nice, delicious and cool to make, and I did it but I didn't like the flavor at all, all the flavors are so soft, and I had to put salsa, chesse, and a lot of stuff for me to eat it. I did it exactly the steps and no flavor at all. =/

    Just put the zucchini first on the parchment paper and then pour the eggs on top, no need to flip it later, and I would not use the the grated zuchini in the eggs batter... But that's just me. Sounds super delicious though...
